A Tank can either be a: Death Knight, Druid, Monk, Paladin, or Warrior. They can take lots of damage in either PvP or PvE, but are not focused on doing a lot of damage. In PvP, they are good flag carriers and are good at charging into big groups of enemies.
In PvE, they obviously play the Tank role in a raid or dungeon, focusing on getting all the creatures to attack them.

Healer
A Healer can either be a: Priest, Shaman, Monk, or Druid. Now you might be wondering, "Didn't you say a Monk and Druid is a tank?" Well, that's a cool aspect of WoW. You can make your character do up to 2 roles.
ANYWAYS, Healers are essential in both PvP and PvE. It makes a good team in PvP to have a Healer, so the DPS and Tanks can do their job without getting killed.
In PvE, they obviously heal everyone in the raid or dungeon, focusing on proper mana maintence and keeping your groupies alive.

DPS
A DPS can be any of the classes. It just depends on what you spec in. DPS focus on doing as much damage as possible. They are always essential for both PvP and PvE, because the more damage the more the health of the enemy will go down.
